Cheeseburger Casserole

Thought I'd post this recipe in response to a handy blurb about using old bread, over at "Thy Hand hath Provided."...


I stash my bread odds’n’ends in a ziplock in the freezer, until I have enough to make this comforting winter casserole.  A mix of pumpernickle, rye, baguette, etc, make it so much more interesting.

Cheeseburger Casserole:
8-10 slices of toast (or equivalent in dried bread), toasted and cubed.
1 C grated cheddar (or your favorite cheese)
1 pound ground beef 
1/2 salt or garlic salt
1/4 C chopped onion (celery is nice, too)
4 or 5 dill pickles, diced (or use some relish)
dash of pepper
2 eggs
1 1/2 C milk
ketchup and mustard
Cook the meat, onion, salt and pepper until browned.  Arrange half of the toast pieces in the bottom of a greased 9x13 pan.  Sprinkle the meat over this, evenly, followed by the cheese and pickles.  Put mustard and ketchup on as desired (Dijon is great!).  Arrange the rest of toast over all.  Whisk the egg and milk together and pour evenly over the casserole.  Bake at 350 F for 1/2 an hour.  Serve with salad or veggies and dip for a well-rounded meal.  Six servings.
